Ingredients:

  • 200 grs. of butter
  • 150 grs. of powdered sugar
  • 300 grs. of cornstarch
  • 1 1/2 cups of flour
  • 3 egg yolks
  • 1/2 teaspoons of baking powder
  • 1 teaspoon of vanilla extract
  • 1 grated lime peel

Preparation:

Sift the flour, baking powder and cornstarch.
In a separate bowl beat butter with sugar.
Add the yolks to the dry ingredients and add the butter and grated lime peel.

Mix well to form a soft dough. Stretch the dough in pieces with a rolling pin and cut pieces of a medallion size. For this you can use cookie cutters or use your imagination.

Bake at moderate temperature (350 degrees Fahrenheit) for about 10 minutes or until golden. When cool join two with manjar blanco and then sprinkle the alfajor with powdered sugar.
